1 lb. great northern white beans
2 or 3 bay leaves
1/2 lb. diced ham
3 stalks of celery - diced small
1 medium white onion - diced small
1 diced carrot - small
Salt and pepper to taste
Degassing the beans: Add the beans to boiling water for two minutes. Take off fire and cover the beans while they set for one hour. Pour off water and drain. No other ingredients can be added during soaking/degassing.
Add the ham, vegetables and spices to the beans. Dice all the vegetables small.
Boil on medium heat for two hours until beans are soft. 1/2 cup of beans can be mashed in a cup and added to the soup for thickening.
